PROBLEM TO BE SOLVED: To provide frozen sliced fish which appears to have a plenty of fat when thawed.;SOLUTION: The oil-in-water emulsion, having a specific average particle size, having lactate and starch blended therein, and causing the separation of oil at the time of freezing, is injected into frozen sliced fish to prepare frozen sliced fish which appears to have a plenty of fat when thawed.
