A method of enriching food and feed is proposed, which makes it possible to neutralize pollution with mycotoxins, increase the content of protein and nucleotides, provide immunomodulation, improve aroma and eatability. The method involves the inclusion in food and feed of a functional additive based on the biomass of yeast, processed in order to increase the bioavailability and biological activity of its components by dry micronization, possibly with the addition of an agglomeration stage. The composition obtained in this way contains all biologically active components, originally present in live yeast, intact. Compared with conventional methods for processing yeast biomass, the method proposed here has less hardware requirements, a speed guaranteed by protection against microbial contamination, prevents degradation of valuable biopolymers, and results in a product containing an fraction insoluble in an aqueous medium with an extremely high surface area.
