The present invention relates to a method for ripening and coloring fruit, comprising: a sealing cover preparation step (S100); an ethylene-producing agent embedding step (S200) of embedding an ethylene-producing agent in the sealing cover prepared in the sealing cover preparation step (S100); a sealing step (S300) of wrapping and sealing a fruit on a tree with the sealing cover; an ripening and coloring step (S400) of leaving the fruit for a predetermined period of time after the sealing step (S300) so as to ripen and color the fruit; and a fruit-harvesting step (S500) of removing the sealing cover after the predetermined period of time has elapsed, and harvesting the fruit. As described above, the method of the present invention ripens and colors fruit prior to harvesting from a tree, and therefore eliminates the necessity of preparing a space for storing the fruit and maintains the freshness of the fruit.
