PROBLEM TO BE SOLVED: To provide a method for attractively and favorably (beautifully) peeling a loquat fruit without damaging the fruit skin or heating it, and a favorable (beautiful) peeled loquat fruit obtained by the peeling method.;SOLUTION: The method for peeling a loquat fruit includes: washing the loquat fruit; treating it with liquid including an enzyme liquid containing a pectin degrading enzyme and a vegetable polysaccharide degrading enzyme (where the pectin degrading enzyme is excluded), and a surface-active agent; and then removing at least an epicarp of the loquat fruit.;COPYRIGHT: (C)2015,JPO&INPIT
