The present invention refers to a method for producing fructanase resulting from Kluyveromyces marxianus yeasts as well as its respective application to Agave fructans for the obtention of different products. This invention replaces the traditional methods of acid-thermal hydrolysis currently used in the tequila industry and in the obtention of fructose-rich syrup. The invention also replaces a patent in which fructose-rich syrup is produced by enzymatic hydrolysis from Agave fructans. The products obtained by the application of fructanases obtained from Kluyveromyces marxianus yeasts to branched fructans, such as Agave fructans, gramineae and/or grass fructans, are applied to the food, pharmaceutical, biotechnological and bio-energy producing industries, which may be used directly as a dietary fiber or as an ingredient for the formulation of food, pharmaceutical and cosmetic products.
