Refers to a process for producing a protein concentrate from crushed by deodorizing method cuts Mantle of Squid (Dosidicus gigas) with Citric Acid without the use of water, which comprises: (a) collected which includes the selection of Chilled and cuts the Mantle; (b) tritur Designed with 2 to 2.5 wt% Citric acid to precipitate Proteins from meat in a mass of Wet acidic with a pH of 4.5 to 4.8; (c) pressed the wet mass of acid to remove the acid liquor to obtain an Acid insoluble Protein Concentrate; (d) concentrate mixed with i) 2.5% by weight Sodium bicarbonate or in combination with 25% in weight of ice To Neutralize the PH of 6.7 to 7.2, and (ii) 8% by weight of Sorbitol in combination with 0.5% by weight of Calcium chloride to obtain a homogeneous Mass neutralized and stabilized; and e) preservation by freezing. This procedure is useful in the manufacture of similar Products Seafood gelled, imitation Crab Meat, squid ring, Shrimp, Lobster and anchovy imitation
