Preparing a foodstuff-in-aspic dish, comprises placing foodstuffs into a bowl, filling the bowl with liquid aspic, boiling everything in the bowl, removing the dish (1) after solidification of the aspic, packing, inserting the packed dish in a negative mold (2), heating for a second time, preferably boiling, where the packed dish remains in the negative mold until the resolidification of the aspic.
