The invention relates to an imitation dairy food that may or may not be matured, comprising at least one non-animal fat and at least one protein, the foods possibly being matured in at least part of the mass thereof and/or being matured on the surface. The invention also relates to a method for manufacturing such foods, in particular imitation dairy products such as imitation cheeses, matured on the surface and/or in the mass, from an imitation cheese containing a caseinate and/or a casein and using maturing methods traditionally used to mature cheeses and/or using novel maturing methods. The invention further relates to a matured or non-matured imitation food obtained by implementing one of the methods according to the invention. The invention lastly relates to the use of a matured imitation food or a non-matured imitation food for direct consumption, in food preparations, as ingredients or as a base ingredient that may be subject to additional maturing.
