The present invention relates to a process for reducing the alcohol content of alcoholic beverages, in particular beer. The alcoholic beverage is initially cooled to an initial temperature below 0 ° C. The cooled beverage is then exposed continuously or discontinuously in a gas atmosphere to a low gas pressure below 6.1 hPa for a period of time during which portions of alcohol and water contained in the alcoholic beverage pass into the gas phase and are thus removed from the alcoholic beverage. The shares in the gas phase shares are each separated continuously or discontinuously from the gas atmosphere. The proposed method allows a reduction of the alcohol content of, for example, beer on receipt of an attractive flavor profile without thermal stress, the equipment cost is low.
