The present invention provides a method of preparing meat with improved flesh using bromelain and meat prepared thereby. The method comprises the steps of: inserting bromelain into meat to be processed; immersing the meat inserted with the bromelain in a bromelain solution; and maturing the meat inserted with bromelain which is immersed in the bromelain solution in a refrigerator for a predetermined time, wherein the meat to be processed is a broiler chicken or an old laying hen and in the step of inserting bromelain, bromelain is inserted into a broiler chicken by a tumbling operation.;COPYRIGHT KIPO 2015
