FIELD: food industry.;SUBSTANCE: vegetal raw material pectin production method involves operations of hydrolysis with hydrochloric acid and pectin substances extraction from vegetal raw materials. The hydrolysis and extraction processes with usage of polyharmonic vibration impact within the frequency range of 15-50 Hz.
