Method of stabilising the fermentation conditions of foodstuffs in flexible packaging,In particular, the fermented cabbage in the pouch is released from the inside of the packaging through the permeation of fermentation products, which are advantageously volatile, while the tension of the flexible coating remains below the limits of the tightness of the flexible coating combinations. Useful fermentation products are released through the fan. Optionally, fermentation products are released through the permeable membrane. The packaging with a flexible coating for the preservation of a fermentating food, in particular for fermentation yeast, has a foil coating authorised for contact with food,with at least one flow (2) of fermentation products from the inside to the outside of the coating (1) through the permeable barrier (3),favourably with an inlet inside the above liquid level. It is made of a layer of cardboard or paper with an inner foil coating,favourably shaped in the form of a rectangular structure with a wall made of a foil (1). Optionally, the packaging is made of a bowl (6) or a plastic cup closed in the upper part with a blister foil (1b) (2). The permissible partition (3) is a fan. The optionally permeable partition (3) is a gas permeable membrane (3b). The partition (3) is glued or welded to the film coating (1, 1b). The film coating (1) has additionally known multiple-use strings (9),favourably anchored on the arch.
