This utility model relates to the process of producing longganisa (flavoured sausage) with banana (Musa acuminata) blossom as meat extender following the steps of: washing the small intestine of hog; scraping the intestine until thin then set aside; washing one kilo pork meat, removing the flesh and grinding or slicing into fine pieces and putting into a bowl; cleaning banana blossom by removing the hard bract, separating the softer bracts of the banana blossom including flowers; weighing one kilo of the banana blossom and washing thoroughly; cutting the banana blossom into fine julienne strips; mashing the banana blossom strips with 500 g salt and washing with water; squeezing the banana blossom from thoroughly to remove the water and putting into a separate bowl; combining the meat and the banana blossom and mixing thoroughly; adding ground garlic and black pepper; adding 5 tablespoon sugar and 150 ml soy sauce and mix thoroughly; inserting the mixture in the small intestine and tying a thread to make segments according to your desired size or length.
