A method for predicting the sweetness and the acidity of fruits, according to the present invention, is capable of predicting, in advance of harvest, the sweetness and the acidity of a mature fruit from a sample of an immature fruit using a prediction model for sweetness or acidity, and a predicted sweetness/acidity value can be used as data for managing the quality of fruits by controlling the amount of harvest of the fruit before the fruit fully matures on the basis of the predicted sweetness/acidity value. In addition, the sweetness/acidity value can be used as data for selecting candidate seeds when producing a new variety of a fruit, thereby improving efficiency when producing a new fruit variety.
