The present invention includes a multi-step fermenting method of sprout peanut and a composition including the sprout peanut fermented by using the same. The method includes the steps of: a) a medium generating step of mixing microorganisms to sprout peanuts; b) a fermentation step of culturing the medium at the temperature of 18-45C and the humidity of 40-85%; and c) a sterilizing step of processing the fermented substance at 100-132C for 10-40 minutes. The steps from a) to c) are repeatedly executed twice or more.
