Disclosed are a method of producing an aronia extract having a taste enhanced by microencapsulation, and foods including the aronia extract. To this end, the method includes the steps of: preparing a coating solution by adding 100-400 parts by weight of water to 100 parts by weight of a fat coating solution including palm oil, sugar, and sodium caseinate and mixing the water with the fat coating solution; producing a mixture by mixing aronia juice with the coating solution; and performing coating by inputting the mixture into a high-pressure homogenizer and homogenizing the mixture under a pressure of 150-200 bar. In addition, foods including the aronia extract produced by the method are provided. According to the present invention, the intrinsic acerbity and bitter tastes of an aronia fruit are reduced so that everyone can easily ingest the aronia extract.
