The present invention relates to a method of preparing eco-friendly persimmon pie with a chewy texture like jelly. The method of preparing the eco-friendly persimmon pie with a chewy texture like jelly, according to the present invention, comprises: a first step of chopping persimmon with skin to prepare persimmon pulp, and mixing and stirring 1,000 parts by weight of the persimmon pulp with 50 parts by weight of sugar and lemon juice to prepare filling for the persimmon pie; a second step of mixing and stirring 100 parts by weight of medium flour, 9 parts by weight of sugar, 1.5 parts by weight of salt, 55 parts by weight of butter for a pie crust, 2 parts by weight of milk powder, and 35 parts by weight of cold water, and kneading persimmon pie pastry; and a third step of placing the filling for the persimmon pie prepared in the first step into a bottom surface of the persimmon pie pastry, and then baking the preparation in an oven to obtain the persimmon pie. Accordingly, the method of preparing the eco-friendly persimmon pie has effects of: providing natural flavor of fruits and chewy texture of persimmon pulp; and lowering sugar content as persimmon enriched with nutritional contents and beneficial to the human body is used to prepare fruit pie.;COPYRIGHT KIPO 2016
