The present invention relates to a composition for a macaron and a preparation method using the same. The macaron is prepared using highly antioxidant perilla powder and part of a table sugar is replaced with xylose in order to lower the total sugar content, and a mixture of perilla powder and almond powder is prepared into a meringue-perilla powder dough using the foam of egg whites, and this dough is hardened in a selected form. According to the present invention, part of the table sugar is replaced with xylose to lower the total sugar content, and by using perilla powder, the content of phenols, linolenic acid and unsaturated fatty acids of the linolenic acid contained in the perilla increases, which leads to an increase in the antioxidant activity, the total phenol content and free radical scavenging activity, which in turn, further increases the antioxidant activity.;COPYRIGHT KIPO 2016
