The present invention relates to a method to use a hydroxyl polymethoxyflavone compound for generating fat, suppressing decomposition of fat, and reducing accumulation of fat. The hydroxyl polymethoxyflavone compound can be used as an effective component of a pharmaceutical composition for preventing obesity or treating fatty liver with a predetermined capacity, or can be used as a constituent of food. To be used as a constituent of food, the hydroxyl polymethoxyflavone compound is derived from the fruit skin of a citrus plant.
