Device for processing bent croissant dough pieces, comprises at least one molding unit (08) which is contacted with active surface of croissant dough piece (01) to be bent, where the points of the croissant dough piece are pushed against a support or pressed against each other and connected to each other at least slightly by a drive of the molding unit. The molding unit can be elastically deformed, where the active surface of the molding unit is created in the active zone by elastic deformation of the molding unit on the dough skin. An independent claim is also included for processing bent croissant dough pieces, comprising contacting at least one elastically deformable molding unit is contacted with an active surface on the circular croissant dough piece for engaging in deforming manner, holding the points of the croissant dough piece against a support, or pressing the points against each other and connecting points to each other at least slightly, where the molding unit reaches a final deflection and the points of the croissant dough piece are pressed against the surface or pressed against one another, and the molding unit remains in the final deflection for a certain residence time and is brought to the end of engagement of the peaks of the croissant dough pieces.
