PROBLEM TO BE SOLVED: To provide instant chicken ginseng soup which allows a user to eat chicken ginseng soup having a texture at instant and a production method thereof.SOLUTION: Instant chicken ginseng soup which is formed by smoking processing using a quercus acutissima chip and a production method thereof are configured so that: a subsidiary material is put into an abdominal cavity of chicken; the chicken is put into a smoking-boiling machine; in the state, a quercus acutissima chip comprising almost 5-20% of moisture is burned for 1-10 minutes at temperature of 60-80°C for generating smoke; then, a surface of the chicken is subjected to smoking processing and sterilization processing by the smoke generated from the quercus acutissima chip; then the chicken is rapidly frozen.SELECTED DRAWING: None
