PROBLEM TO BE SOLVED: To provide a persimmon puree having higher astringency-regeneration inhibitory effect, compared to the prior art.SOLUTION: An astringency-regeneration inhibited persimmon puree for heating is characterized in that 0.1wt% or more of chitosan is added to and mixed into an astringency-removed persimmon.
