The present invention relates to the development of new milk products through the incorporation of microparticles into yogurts as an alternative to existing milk beverages incorporated with phytosterols. THE ADVANTAGES OF THE NEW DEVELOPED PRODUCTS ARE ESSENTIALLY THE USE OF LOWER CONCENTRATIONS OF THESE MOLECULES TO OBTAIN A HIGH HYPOCOLESTEREMIC ACTIVITY; AND THE USE OF THE BIOLOGICAL RESIDUES PRODUCED BY THE MUSHROOM INDUSTRIES, FOR THE OBTAINMENT OF BIOATIVE MOLECULES OF VALUE ADDED (MICOSTEROLS). IN ADDITION, THE ANTIOXIDANT ACTIVITY EXPOSED BY THIS CLASS OF COMPOUNDS LEADS TO AN INCREASE IN THE VALIDITY PERIOD OF THE DEVELOPED FOOD PRODUCTS. THIS NEW DAIRY PRODUCT ALSO RESPONSES AN INDUSTRIAL CONCERNED FOR THE DEVELOPMENT OF NEW FUNCTIONAL FOODS WITH HEALTH BENEFITS, IN THIS PARTICULAR CASE, THE DEVELOPMENT OF NEW FOODS WITH CAPACITY TO DECREASE THE LEVELS OF CHOLESTEROL, MINIMIZING THE RISKS OF DISEASES RELATED TO DISTURBANCES CARDIOVASCULARES ASSOCIATED WITH CHOLESTEROL
