The present invention relates to an automated system for preparing doughs for pelletisation, comprising sensors, transducers, meters, adjuvant additives, at all critical points for controlling the variable and parameters linked to the final quality of the steam and dough preparation for pelletisation. These parameters can further be obtained by an interface with the own monitoring systems of the industrial production process, connected to big data by the CLPs of the assembly according to the invention, to capture data that are transmitted to the steam quality control software in order to provide dry saturated steam having a suitable titer. The system can be modulated for each factory, using the assembly according to the invention, and diagnosed in real time on the basis of big data. The present invention also relates to the automated assembly to provide dry saturated steam during pelletisation, which has the functions of providing parameters for automatically controlling steam parameters and for controlling the cooking quality of the dough. The assembly also includes the use of big data, mist separators, the optional use of a adjuvant, wherein the capacity of big data is used for monitoring the behaviour of the entire factory and to control immediately and continuously the steam pressure, by preventive diagnostic software, in order to provide suitable dry saturated steam, to ensure the dough preparation quality, the quality of the final pelletised product and greater productivity.
