The present invention relates to a method for manufacturing a fermented black ginger extract containing high shogaol, capable of providing a fermented black ginger extract containing a high contents of 6-shogaol by using a fermentation technique, and fermented black ginger extract powder manufactured thereby. According to the present invention, the method comprises the following steps: mixing a pulverized material acquired through a step of steaming, drying and pulverizing cut ginger with fermented spirit with an ethanol concentration of 70% to manufacture a ginger extract; and filtering the extract with a filter press to manufacture a first filtered solution, processing a concentrate concentrating a second filtered solution, which is acquired by filtering the first filtered solution with a cartridge filter, with a reduced pressure, fermenting the concentrate, and then concentrating the fermented concentrate.;COPYRIGHT KIPO 2016
