The present invention relates to a method for manufacturing tuna jerky containing Dendropanax morbifera Lev. and tuna jerky manufactured thereby manufactured by adding a Dendropanax morbifera Lev. extract eluting a high concentration of effective components of Dendropanax morbifera Lev. to make a salting solution, infiltrating the salting solution into tuna processed in a plate shape, and performing aging and drying, so as to manufacture tuna jerky. Through the present invention, a main material of jerky is diversified, so customer preference is coped with. In addition, unpleasant odor and taste likely to be generated in a manufacturing and distribution process of the tuna jerky can be effectively restricted without adding pungent additives with a strong fragrance.;COPYRIGHT KIPO 2017
