The present invention relates to a method for manufacturing a garlic stem red pepper paste dried yellow corvina, which comprises: a step for making dried yellow corvina as fielet and salting and drying the dried yellow corvina (S10); and a step for mixing and aging the dried yellow corvina, red pepper paste, and garlic stem (S20). The present invention aims to provide the method for manufacturing the garlic stem red pepper paste dried yellow corvina, which adds functionality of the garlic stem, and at the same time, improves mouthfeel by neutralizing intrinsic fishy smell of the dried yellow corvina.
