Provided are a method for manufacturing dried yellow corvina covered with red pepper paste to provide excellent preservability and increase texture and dried yellow corvina covered with red pepper paste thereof. According to the present invention, the method for manufacturing dried yellow corvina covered with red pepper paste comprises: a dried yellow corvina shred forming step of tearing the dried yellow corvina to prepare dried yellow corvina shred; a steaming step of steaming the dried yellow corvina shred; a mixing step of mixing the dried yellow corvina shred and red pepper paste; and an aging step of aging the dried yellow corvina mixed with the red pepper paste. In the mixing step, the red pepper paste includes a raw garlic material, wherein the raw garlic material is manufactured by a step of inputting garlic in a steaming pot passing steam of 100 to 100C therethrough and steaming the garlic for 15 to 25 mins, a step of moving the steamed garlic to an asepsis fermentation chamber maintained at a temperature of 35 to 55C and fermenting the steamed garlic for 72 to 90 hours while maintaining the temperature, and a step of separating and collecting only a sticky decomposed extract from the fermented garlic to extract the sticky raw garlic material.;COPYRIGHT KIPO 2020
