The present invention relates to a method for hygienically processing fresh-cut vegetable salad, and fresh-cut vegetable salad hygienically processed by the method. The method comprises the following steps: (a) preparing a mixture in which Lonicera japonica, Chrysanthemum indicum L., horseradish and propolis are mixed; (b) adding water to the mixture prepared in the step (a), extracting the same with ultrasonic waves and filtering the same, and preparing a mixed extract; (c) mixing acetic acid, calcium lactate and the mixed extract prepared in the step (b) with purified water, sterilizing the same and preparing vegetable-immersed water; and (d) immersing vegetables washed in water to the vegetable-immersed water prepared in the step (c) and dehydrating the same.
