Compositions and methods have been developed to precisely characterize immunoreactivity for food allergens, in which test surfaces are provided that incorporate different food antigen preparations from the same food into separate test sites. Such coated surfaces can be made using neat and cooked food. The use of such test surface panels to characterize specific IgG, IgA, and / or C1q binding provides improved sensitivity and accuracy in determining immunoreactivity and response to specific foods.
