The present invention relates to a salt substitute containing an abalone hydrolysate exhibiting effects of increasing saltiness, and a production method thereof. According to the present invention, the salt substitute has saltiness similar to salty taste produced by sodium chloride in foods or liquid foods such as soups, and can be used as a substitute of salt to increase saltiness of conventional sodium chloride.
