The present invention relates to a fast-fermented soybean paste product prepared by using floral axis parts of Nypa fruticans and a preparing method thereof. More specifically, the fast-fermented soybean paste preparing method includes: (a) soaking soybeans in immersion water; (b) letting the soaked soybeans increase in volume; (c) mixing the soybeans increased in volume with the powder of the floral axis parts of Nypa fruticans, an extract of the floral axis parts of Nypa fruticans, or both; (d) inoculating the mixed ingredients with Bacillus bacteria; and (e) fermenting the ingredients inoculated with the Bacillus bacteria. According to the present invention, the method can be used to prepare the fast-fermented soybean paste product which has an antioxidative function by using the floral axis parts of Nypa fruticans, does not have the unique odor of the fast-fermented soybean paste, and has excellent savory taste, thereby promoting the consumption of the fast-fermented soybean paste. The present invention also can extend the shelf life of the fast-fermented soybean paste product.
