The present invention relates to a grilled sea bream dish with a saffron pea sauce using a saffron-containing papillote cooking method, and more specifically, to a method for cooking a grilled sea bream dish, which comprises a step of adding a saffron pea sauce, wherein the grilled sea bream dish refers to a grilled sea bream dish containing the saffron pea sauce. The grilled sea bream dish with a saffron pea sauce using a saffron-containing papillote cooking method, prepared according to the present invention, provides excellent sensory properties as well as excellent functionalities due to excellent nutritional components contained in saffron. The grilled sea bream dish with a saffron pea sauce using a saffron-containing papillote cooking method contains a shrimp scallop croquette other than saffron, and thus allows consumers to easily consume nutritional components contained in risotto, and thus provides excellent sensory properties and/or functionalities.;COPYRIGHT KIPO 2018
