The present invention relates to a method for producing a konjac composition as a low-calorie health food having a high antioxidant activity, comprising an antioxidant-functional konjac composition containing anthocyanin and chitosan as active ingredients and a manufacturing method.According to the present invention, the antioxidative effect of anthocyanin is further enhanced by chitosan, thereby providing an antioxidant-effective konjac composition capable of changing its color and antioxidative effect depending on the composition, and providing a method for producing the composition.Further, according to the present invention, it is possible to produce konjac processed foods of various forms such as mushrooms, noodles and angora bolls using the konjac composition.;
