To provide a roasted fish maintaining appearance, texture or the like of normal roasted fish although bone is softened and eaten.SOLUTION: There is provided a manufacturing method of cooked fish having texture and appearance of roasted fish, of which bone can be eaten including softening bone by conducting high pressure cooking with heating fish with bone at core temperature of 100 to 120°C for 5 to 20 min. then roasting the fish till deep flyer is appeared.SELECTED DRAWING: None
