PROBLEM TO BE SOLVED: To provide a low carbohydrate and high protein snack confectionery which is hard and stiff as a jerky, having not texture hardly to bite off, but crispy texture easy for anyone to eat even with mainly containing meat.SOLUTION: There is provided a dried meat snack confectionery having crispy texture, by blending peptide with average molecular weight of 1000 to 10000 to a sliced single meat lump and warm air drying to adjust a final composition with content of peptide of 1 to 15 wt.%, content of total protein derived from meat lump of 55 wt.% or more, content of hydrocarbon of 10 wt.% or less, content of carbohydrate of 5 wt.% or less and moisture value to 10 wt.% or less.SELECTED DRAWING: None
