PROBLEM TO BE SOLVED: To provide a production method of a roasted seed capable of uniformly roasting a seed which becomes a fat raw material, the roasted seed produced by the production method, a roasted oil acquired from the roasted seed, a fat composition including the roasted oil, and a processed food produced by using the fat composition or roasted seed.SOLUTION: The production method of the roasted seed comprises a step of roasting a seed which becomes a fat raw material, by using superheated steam.
