PROBLEM TO BE SOLVED: To provide a production method of a dried meat product having a softer texture than a conventional dried meat product, and having a proper loosening feeling.SOLUTION: A production method of a dried meat product includes steps for: laminating planar salted meat, and press-forming the meat approximately vertically to a planar surface; and drying and/or smoking the press-formed meat.
