An emulsifying composition, in particular for cosmetic use, that is capable of obtaining an oil-in-water (O/E) emulsion, comprising: a. at least one cyclodextrin, b. and at least one O/E emulsifier of natural origin, the O/E emulsifier having a hydrophilic-lipophilic balance (HLB) of less than 8. A method for producing an O/W Pickering emulsion composition, in particular for cosmetic use, comprising the following steps: a) dispersing, in an aqueous phase, an emulsifying composition comprising at least one cyclodextrin and at least one O/E emulsifier of natural origin, the latter being present in a ratio of between 0.01 and 1 part, and preferably between 0.15 and 0.30 parts to 1 part by weight of at least this cyclodextrin; this O/E emulsifier of natural origin being chosen from at least one non-ethoxylated fatty ester of polyols having a hydrophilic-lipophillic balance (HLB) of less than 8, b) adding, to the mixture obtained in step a), a fatty phase, in an amount of between 10 and 65% by weight, with sufficient mechanical stirring for the fatty phase to disperse into fine droplets in the aqueous phase and for an O/W emulsion having a drop size smaller than 10 μm to be obtained.
