The present invention relates to a noodle dish using Jerusalem artichokes and shrimp and a preparing method thereof. The noodle dish is prepared and completed by cutting peeled shrimp and Jerusalem artichokes, aging the ingredients in saltwater, drying the ingredients, and preparing the dried ingredients in a powder form, grinding the washed Jerusalem artichokes in a grinder, filtering the ground substance through a fabric to separate the ground liquid therefrom, kneading wheat flour, powder, and ground liquid, aging the dough, and preparing noodles with a medium thickness, preparing garnish parts using onion peels, broth with fermented fish sauce and soy sauce, zucchini, carrots, Jerusalem artichokes, shrimp flesh, and squid flesh parts before boiling the noodles in the broth and adding the garnish parts thereon. The ratio of the shrimp and Jerusalem artichokes powder is appropriately adjusted in a blending operation to prepare the dough including the mixture of the ingredients and wheat flour for preparing noodles. Calcium and mineral supplements are naturally consumed by consuming the noodle dish while realizing and improving the soft and chewy texture of the noodles.;COPYRIGHT KIPO 2019
