The present invention relates to a method for manufacturing colored makgeolli using a gardenia fruit and, more specifically, to a method for manufacturing colored makgeolli using a gardenia fruit, capable of easily and economically manufacturing colored makgeolli enabling natural color and reinforcing biological activity in comparison with existing makgeolli. To achieve the purpose of the present invention, the method for manufacturing colored makgeolli using a gardenia fruit includes: a first soaking process (10) of manufacturing crude liquor; a rice coloring and steaming process (20) of manufacturing gardenia fruit rice; a second soaking process (30) of adding and sufficiently mixing 20-40 parts by weight of the crude liquor, 0.5-5 parts by weight of leaven, 0.01-0.1 parts by weight of purified enzyme, and 160-190 parts by weight of water in the gardenia fruit rice manufactured by the rice coloring and steaming process (20) and ripening the same for 5 days; a third soaking process (40) of adding and sufficiently mixing 10-50 parts by weight of starch sugar and 20-30 parts by weight of water and ripening the same for 20-28 hours; a lees removing process (50) of removing lees by filtering the makgeolli; and a concentration and sweetness control process (60) of adding 0.02-0.08 parts by weight of sweetness and 120-150 parts by weight of the water and controlling the concentration of alcohol and sweetness.;COPYRIGHT KIPO 2019
