The present invention relates to a producing method of functional beverage including a Phellinus linteus extract. The functional beverage producing method includes: a step (a) of producing a Phellinus linteus hot water extract by adding the whole fruit body of Phellinus linteus to water, heating the mixture with strong fire for 2-3 hours, and additionally heating the same with weak fire for 2-3 hours; a step (b) of producing Phellinus linteus vinegar by inoculating acetobacter to a Phellinus linteus culture medium obtained after culturing Phellinus linteus mycelium and fermenting the same; a step (c) of producing a fermented product of bean leaves by mixing and aging bean leaves and fermented alcohol; and a step (d) of producing functional Phellinus linteus beverage by mixing 5-20 parts by weight of the Phellinus linteus vinegar and 3-10 parts by weight of the fermented product of bean leaves with respect to 100 parts by weight of the Phellinus linteus hot water extract. By the same, the functional beverage including the Phellinus linteus extract: maximizes the content of beta-glucan; includes a vinegar ingredient produced by using a culture medium after culturing Phellinus linteus; and improves health functionality and palatability together by using both the fruiting body and the mycelium of Phellinus linteus.
