The present invention relates to a tangerine peel jam production method. 70-80 wt% of tangerine peel and 20-30 wt% of sugar are added to a steam steaming apparatus having a stirrer to evaporate water by steaming at high pressure and high temperature so as to have residual moisture content of 10-20%, thereby producing a tangerine peel jam composition. The tangerine peel jam composition is filled and cap-sealed in a sterilized storage container to obtain a tangerine peel jam product.;COPYRIGHT KIPO 2019
