The present invention relates to a citron peel jam production method. 70-80 wt% of citron peel and 20-30 wt% of sugar are added to a steam steaming apparatus having a stirrer to evaporate water by steaming at high pressure and high temperature so as to have residual moisture content of 10-20%, thereby producing a citron peel jam composition. The citron peel jam composition is filled and cap-sealed in a sterilized storage container to obtain a citron peel jam product.;COPYRIGHT KIPO 2019
