The present invention relates to a technique of measuring the whiteness of rice milled in a process of milling brown rice to form white rice in a rice milling process, in real time. The milling degree of the rice milled by an existing milling facility is controlled by an expert as the expert visually observes the whiteness of the rice. Therefore, the existing milling facility largely wastes human resources as a worker always performs the work of observing the whiteness of the rice milled and milling the rice. Also, the whiteness is always visually checked during the milling work, and, therefore, the worker has considerable work fatigue. To solve this problem, the whiteness of the rice milled is measured in real time and can be used for milling so that an unskilled person can control the rice milling device. Also, provided is a unit capable of measuring the weight of the rice sampled and inspecting whether the rice is excessively milled based on the weight of a rice grain by measuring the quantity of the rice in which the weight is measured. Also, provided is a user capable of measuring the quantity of the rice broken and the degree of broken rice at the same time by additionally having an LED illumination at a lower end of an optical sensor used for measurement, and measuring a light quantity of the optical sensor. So, the milling device can be variously operated.
