The present invention relates to rice noodles and a method of manufacturing the same. More specifically, the present invention relates to rice noodles which can provide a variety of useful components possessed by Dendropanax morbiferus, wherein the addition of black barley can significantly reduce the amount of flour being used, while giving satiety to minimize the gluten component of the flour to prevent the occurrence of allergies by the flour, and which uses a unique extraction method (PEF) or additional ingredients to compensate for the disadvantages of Dendropanax morbiferus and black barley, and can exhibit new and synergistic effects and excellent organoleptic properties; and to a method of manufacturing the rice noodles.
