To provide a device and system for evaluating food texture, which allow for controlling relative speed of a crushing member to a sample, and/or controlling the force (load) exerted on the sample.SOLUTION: A food texture evaluation device is provided, comprising: a drive unit with a linear motor; a crushing member to be driven toward a sample by the drive unit; a load measurement unit comprising a load cell configured to measure force exerted on a sample table when the sample is pressed by the crushing member; and a vibration sensor configured to detect vibration generated by the sample subjected to a force.SELECTED DRAWING: Figure 1
