A glucan product characterized by being in gel form at 25°C and at a pH between 4 and 8 and comprising a beta glucan derived from yeast at a concentration of 0.1 to 6% in an aqueous solution and 0.2 to 3% carboxymethyl cellulose, uses thereof and physical supports comprising the same.
