Disclosed is a process of producing Peanut Crunch comprising the following steps: toasting raw shelled peanuts until done; removing the shell of the toasted peanut; removing the skin from the unshelled peanuts; chopping the skinless peanuts until almost fine; whipping the egg white with sugar until stiff; dropping the flour to the Whipped egg white and sugar and continue whipping; folding the chopped peanuts into the mixture flour, eggwhite, and sugar using rubberized scraper; transferring the folded mixture to the pastry bag pressing the mixture together with the pastry bag on greased baking sheets; and baking the pressed mixture until light brown color is attained.
