Disclosed is a beetroot raw bar based on a beet root with a fruit and berries taste, which contains raw beet fibre high concentration of food fibres 60 % and more, which is purified, without use of strong acids, saturated with natural preservatives, by sparing evaporation in a vacuum, wherein natural fillers used are date paste, flax seeds, flax flour, natural fruit fillers in form of powders of berries and fruits, ascorbic acid, sorbic acid, natural flavouring agents based on fruits and berries, natural sweetener stevioglycoside, with the following ratio of initial ingredients in grams: beet fibre raw material 60.5–66.0; date paste 20.0–33.0; flax seeds 2.5–12.3; flax flour 2.5–10.5; natural fruit fillers in the form of powdered berries and fruits 2.0–6.0; ascorbic acid 0.74–1.0; sorbic acid 0.19–0.24; natural sweetener 0.05–0.07; natural flavouring agents not more than 1.0. High-grade date paste is used, as natural fruit fillers natural powders of dried fruits and berries dried with the help of infrared drying and ground fruits are used, natural flavouring agents are represented by natural extracts or fruit or berry oils, as well as liquid natural refuses based on natural fruit or berry oils, wherein at weight of 25 g in the bar contains not more than 30 kcal.;EFFECT: invention allows to produce a product formed in a bar, which has a minimum caloric content average of 30 kcal per 25 g, with possibility of preserving free natural pectin in the product, high degree of hydration, preventing penetration of part of glucose into blood, providing protective action.;6 cl, 1 dwg, 7 ex
